The addition of truffles to Pisinium's sliced prosciutto provides it with undeniable traditional taste of Istria's famous truffle charcuterie products. The product is dried in air chambers, and when the infamous Bura storm starts, specially protected windows are opened to allow fresh dry air to dry each piece of meat. During ripening, the product is covered with "noble mold", giving the final note to the story of the uniqueness of the Istrian specialty. Due to slow drying and ripening, the texture of the meat is soft and moist with pleasant smell, typical for dried Istrian products.
Pisinium's range is awarded many gold medals by specialised local institutions, for its quality and traditional manufacturing practices.
Ingredients: pork leg without bone and skin, sea salt, sugar, spices, truffle coating 2% (contains black summer truffle (Tuber aestivum vitt) 3%, acidity regulator: citric acid), flavouring. 100g of product was obtained by drying 161g of pork leg.
